  2. Step 2: Core and slice apples into 1/4-inch thick wedges. Toss with 1 tbsp olive oil, 1/2 tsp salt, and 1 minced shallot. Scatter around chicken on the baking sheet.
  3. Step 3: Roast for 25-30 minutes until chicken reaches 165°F internally and apples are golden at the edges, basting once halfway with 1/4 cup chicken broth.
  4. Step 4: Remove chicken and apples from oven. Sprinkle with 1 tbsp chopped thyme and let rest for 5 minutes before serving.
