Harvested Salmon with Ginger-Turmeric Glaze

Ingredients
- 8 oz salmon fillets
- 1 tbsp coconut aminos
- 1 tsp grated fresh ginger
- 1/2 tsp ground turmeric
- 1 tbsp avocado oil
- 2 cups baby spinach
- 2 lime wedges
Instructions
- Step 1: Pat salmon fillets dry with paper towels and place in a shallow dish. Whisk together 1 tbsp coconut aminos, 1 tsp grated ginger, and 1/2 tsp ground turmeric in a small bowl. Pour over salmon, coating evenly, and marinate for 10 minutes.
- Step 2: Heat 1 tbsp avocado oil in a non-stick skillet over medium-high heat until shimmering. Place salmon skin-side down and cook for 4-5 minutes until golden, then flip and cook for 3 more minutes until opaque and flaky.
- Step 3: While salmon cooks, add 2 cups baby spinach to the skillet for 1 minute until wilted, stirring constantly. Serve salmon immediately with lime wedges for squeezing over the top.
