Helicopter Rice Pilaf

Ingredients
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tbsp butter
- 1/2 cup chopped carrots
- 1/2 cup frozen peas
- 1/4 cup fresh, chopped parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Rinse rice under cold water until water runs clear, then drain. Melt 1 tbsp butter in a medium saucepan over medium heat. Add rinsed rice and stir 1 minute until lightly toasted.
- Step 2: Add 2 cups broth, 1/2 tsp salt, and 1/4 tsp black pepper. Bring to a boil, then reduce heat to low, cover, and simmer 18-20 minutes until liquid is absorbed.
- Step 3: Stir in 1/2 cup chopped carrots and 1/2 cup frozen peas. Cover and let sit 5 minutes. Fluff with fork, then fold in 1/4 cup chopped parsley before serving.
