Herb-Crusted Beef Tenderloin with Sautéed Mushrooms

Ingredients
- 1 (1.5 lb) beef tenderloin
- 2 tbsp avocado oil
- 1 tbsp, finely chopped fresh rosemary
- 1 tbsp, finely chopped fresh thyme
- 2 cloves, minced garlic
- 1 tsp sea salt
- 1/2 tsp black pepper
- 8 oz, sliced cremini mushrooms
- 1 tbsp olive oil
Instructions
- Step 1: Pat beef tenderloin dry with paper towels. Rub with 1 tbsp avocado oil, then mix chopped rosemary, chopped thyme, minced garlic, 1 tsp sea salt, and 1/2 tsp black pepper. Press mixture evenly over all sides of beef.
- Step 2: Heat 1 tbsp avocado oil in a large skillet over medium-high heat until shimmering. Sear beef for 3 minutes per side until golden brown.
- Step 3: Transfer beef to a wire rack on a baking sheet. Roast in a preheated 400°F oven for 12-15 minutes for medium-rare, or until internal temperature reaches 130°F.
- Step 4: While beef rests, heat olive oil in the skillet over medium heat. Add sliced mushrooms and cook for 8-10 minutes until golden and tender, stirring occasionally.
