Herb-Crusted Chicken Thighs with Lemon and Garlic

Ingredients
- 4 bone-in, skin-on (about 1.5 lbs or 680g) chicken thighs
- 2 tbsp olive oil
- 1 tbsp fresh, finely chopped rosemary
- 1 tbsp fresh, finely chopped thyme
- 2 cloves, minced garlic
- 1/2, zested and juiced lemon
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat 4 bone-in, skin-on chicken thighs (about 1.5 lbs or 680g) dry with paper towels.
- Step 2: In a small bowl, mix 2 tbsp olive oil, 1 tbsp fresh rosemary, 1 tbsp fresh thyme, 2 minced garlic cloves, 1/2 lemon zested and juiced, 1/4 tsp salt, and 1/4 tsp black pepper.
- Step 3: Rub the herb mixture evenly over chicken thighs, coating skin thoroughly.
- Step 4: Place chicken skin-side up in a baking dish and bake for 25-30 minutes until skin is golden brown and internal temperature reaches 165°F (74°C).
