Herb-Crusted Chicken with Hidden Garlic Infusion

- 12 oz, skin-on chicken thighs
- 1 tbsp, finely chopped fresh rosemary
- 1 tbsp, finely chopped fresh parsley
- 3, minced garlic cloves
- 2 tbsp all-purpose flour
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat chicken thighs dry with paper towels, then season both sides with 1/4 tsp salt and 1/4 tsp black pepper.
- Step 2: In a small bowl, mix 1 tbsp chopped rosemary, 1 tbsp chopped parsley, 3 minced garlic cloves, and 1 tbsp lemon juice.
- Step 3: Rub the herb-garlic mixture evenly over the chicken, pressing gently to adhere. Let sit for 10 minutes.
- Step 4: Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering.
- Step 5: Place chicken skin-side down in the skillet. Sear for 4 minutes until golden brown and crispy.
- Step 6: Flip chicken, add 2 tbsp all-purpose flour to the pan, and stir to coat the bottom. Cook for 1 minute until flour turns golden.
- Step 7: Transfer the skillet to a preheated 375°F (190°C) oven and bake for 20 minutes until chicken reaches an internal temperature of 165°F (74°C).
- Step 8: Remove from oven, let rest for 5 minutes before serving to allow juices to redistribute.
