Herb-Crusted Pork Chops with Apple Salsa

Ingredients
- 4 (1 inch thick) Pork chops
- 1 tbsp, chopped Fresh thyme
- 1 tbsp, chopped Fresh rosemary
- 1 tsp Garlic powder
- 2 tbsp Dijon mustard
- 2 tbsp Olive oil
- 2, diced Apples
- 1/4 cup, finely diced Red onion
- 1/2, juiced Lime
- 2 tbsp, chopped Cilantro
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions
- Step 1: Preheat oven to 400°F. Pat 4 pork chops dry, then season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Step 2: In a small bowl, mix 1 tablespoon chopped thyme, 1 tablespoon chopped rosemary, 1 teaspoon garlic powder, and 2 tablespoons Dijon mustard. Spread mixture evenly over both sides of pork chops.
- Step 3: Heat 2 tablespoons olive oil in a large oven-safe skillet over medium-high heat. Add pork chops and sear 2 minutes per side until golden brown.
- Step 4: Transfer skillet to oven and bake 12-15 minutes until internal temperature reaches 145°F.
- Step 5: While pork cooks, combine 2 diced apples, 1/4 cup finely diced red onion, 1/2 lime juiced, and 2 tablespoons chopped cilantro in a bowl. Season with a pinch of salt.
- Step 6: Let pork rest 5 minutes before serving with apple salsa.
