Herb-Crusted Pork Chops with Herb Butter

- 4 pork chops
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 2 tablespoons fresh rosemary
- 2 tablespoons fresh thyme
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
Instructions
- Step 1: Season 4 bone-in pork chops on both sides with 1 teaspoon salt and 1/2 teaspoon black pepper. Dredge each chop in 2 tablespoons all-purpose flour, shaking off excess.
- Step 2: Heat 1 tablespoon olive oil in a skillet over medium-high heat until shimmering.
- Step 3: Place pork chops in the skillet and cook for 4 minutes per side until golden brown and an internal temperature of 145°F is reached.
- Step 4: Remove pork chops and set aside on a plate.
- Step 5: In the same skillet, melt 2 tablespoons unsalted butter over medium heat. Add 2 tablespoons chopped fresh rosemary and 2 tablespoons chopped fresh thyme, and cook for 1 minute until fragrant.
- Step 6: Return pork chops to the skillet, coating them in the herb butter, and cook for 1 minute more to melt the butter into the meat.
- Step 7: Serve immediately, noting how the herb butter seeps into the crust during resting.
