Instructions

  1. Step 1: Season 4 bone-in pork chops on both sides with 1 teaspoon salt and 1/2 teaspoon black pepper. Dredge each chop in 2 tablespoons all-purpose flour, shaking off excess.
  2. Step 2: Heat 1 tablespoon olive oil in a skillet over medium-high heat until shimmering.
  3. Step 3: Place pork chops in the skillet and cook for 4 minutes per side until golden brown and an internal temperature of 145°F is reached.
  4. Step 4: Remove pork chops and set aside on a plate.
  5. Step 5: In the same skillet, melt 2 tablespoons unsalted butter over medium heat. Add 2 tablespoons chopped fresh rosemary and 2 tablespoons chopped fresh thyme, and cook for 1 minute until fragrant.
  6. Step 6: Return pork chops to the skillet, coating them in the herb butter, and cook for 1 minute more to melt the butter into the meat.
  7. Step 7: Serve immediately, noting how the herb butter seeps into the crust during resting.
