Herb-Glazed Salmon with Roasted Root Vegetables

  1. Step 1: Preheat oven to 425°F (220°C). Toss 2 diced sweet potatoes and 2 diced carrots with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper in a roasting pan.
  2. Step 2: Roast for 20 minutes until vegetables are tender and slightly caramelized.
  3. Step 3: While vegetables roast, mix 1 tbsp olive oil, 2 tbsp chopped dill, 2 tbsp chopped parsley, 1 tbsp lemon zest, and 1 tbsp lemon juice in a small bowl.
  4. Step 4: Brush herb mixture over salmon fillets. Place salmon on top of roasted vegetables and return to oven. Bake for 12-15 minutes until salmon is cooked through and flakes easily.
