- 1/2 cup, diced bell pepper
- 1/4 cup, finely chopped yellow onion
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/4 tsp dried oregano
- 1 cup, diced fresh tomatoes
- 1/4 cup, chopped fresh cilantro
- 1/2, juiced lime
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a bowl, combine 12 oz ground chicken, 1/2 cup diced bell pepper, 1/4 cup chopped onion, 1/2 tsp garlic powder, 1/4 tsp dried oregano, and salt to taste. Mix gently until combined.
- Step 2: Roll mixture into 12 equal meatballs (about 1-inch diameter) and place on a parchment-lined baking sheet. Brush tops with 1 tbsp olive oil.
- Step 3: Bake for 18-20 minutes until golden and cooked through, flipping once halfway.
- Step 4: While meatballs cook, combine 1 cup diced tomatoes, 1/4 cup chopped cilantro, and 1/2 lime juice in a small bowl. Season with salt.
