Herb-Infused Lemon Roasted Asparagus with Parmesan

Ingredients
- 1.5 lbs trimmed asparagus
- 1 (zest and 1 tbsp juice) lemon
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves
- 1/2 tsp minced fresh rosemary
- 2 tbsp grated Parmesan
- 1/4 tsp kosher salt
- 1/8 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Toss trimmed asparagus with 2 tbsp olive oil, lemon zest, kosher salt, and black pepper on a baking sheet, spreading in a single layer.
- Step 2: Roast for 12 minutes until asparagus is tender-crisp and edges are slightly charred, then remove from oven and sprinkle with minced rosemary and thyme.
- Step 3: Drizzle with 1 tbsp lemon juice and toss gently to coat. Return to oven for 2 minutes to warm the herbs.
- Step 4: Transfer to a serving dish and sprinkle with 2 tbsp grated Parmesan just before serving to prevent clumping.
