- 1 cup extra-virgin olive oil
- 1/4 cup fresh thyme sprigs
- 1/4 cup fresh rosemary sprigs
- 2 garlic cloves
Instructions
- Step 1: Place 1 cup extra-virgin olive oil in a small saucepan and add 1/4 cup fresh thyme sprigs, 1/4 cup fresh rosemary sprigs, and 2 minced garlic cloves.
- Step 2: Warm over low heat for 15 minutes until the herbs are fragrant and the oil turns a pale gold, stirring occasionally to prevent burning — do not let it simmer.
- Step 3: Strain the oil through a fine-mesh sieve into a clean jar, discarding the solids. Let cool completely before storing in a dark cupboard for up to 3 months.
