Herb-Infused Pork Tenderloin with Apple Compote

Ingredients
- 1.5 lb pork tenderloin
- 2 tbsp finely chopped rosemary
- 1 tbsp finely chopped thyme
- 1, minced shallot
- 2, peeled and diced apples
- 1/2 cup apple cider
- 2 tbsp butter
Instructions
- Step 1: Preheat oven to 400°F. Pat 1.5 lb pork tenderloin dry with paper towels. Mix 2 tbsp chopped rosemary, 1 tbsp chopped thyme, salt, and pepper. Rub evenly over the entire surface of the pork.
- Step 2: Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear pork for 3-4 minutes per side until golden brown on all sides.
- Step 3: Transfer skillet to oven and roast for 15-18 minutes until internal temperature reaches 145°F. Remove pork and let rest for 10 minutes.
- Step 4: While pork rests, add 1 minced shallot to the skillet and cook for 1 minute until softened. Stir in 2 diced apples and 1/2 cup apple cider, simmering for 8-10 minutes until apples are tender and liquid has reduced by half.
- Step 5: Stir in 2 tbsp butter until melted and glossy. Slice the rested pork and serve with the warm apple compote.
