Herb-Infused Red Lentil Veggie Burgers

Ingredients
- 1 cup red lentils
- 2 cups vegetable broth
- 1/2 cup old-fashioned oats
- 1 medium, grated carrot
- 3 tbsp, finely chopped fresh parsley
- 1 tbsp, finely chopped fresh dill
- 1/2 tsp garlic powder
- 1 tbsp olive oil
- 1/4 cup whole wheat bread crumbs
Instructions
- Step 1: In a medium saucepan, combine red lentils and vegetable broth. Bring to a simmer, then cook uncovered for 15 minutes until lentils are soft and broth is absorbed, stirring occasionally.
- Step 2: Remove from heat and let cool slightly. Transfer to a food processor with grated carrot, parsley, dill, and garlic powder. Pulse until combined but still slightly textured.
- Step 3: Add oats and bread crumbs, pulse until mixture holds together when pressed. Shape into 4 patties, about 1 inch thick.
- Step 4: Heat olive oil in a skillet over medium heat. Cook patties for 4-5 minutes per side, until golden brown and crisp on the edges, pressing gently with a spatula.
