Herb-Infused Roasted Chicken Thighs

- 2 lbs, skin-on chicken thighs
- 2 tbsp olive oil
- 2 tbsp, finely chopped fresh rosemary
- 1 tbsp, chopped fresh thyme
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Pat 2 lbs chicken thighs dry with paper towels, then rub with 2 tbsp olive oil.
- Step 2: Mix 2 tbsp chopped rosemary, 1 tbsp chopped thyme, 1 tsp garlic powder, 1 tsp salt, and 1/2 tsp black pepper. Rub the mixture evenly over the chicken thighs.
- Step 3: Place chicken skin-side up in a single layer on a parchment-lined baking sheet. Roast for 35-40 minutes until the skin is deeply golden and the internal temperature reaches 165°F.
- Step 4: Let rest for 5 minutes before serving to allow juices to redistribute.
