Herb-Infused Tomato Pasta with Sun-Dried Tomato Pesto

Ingredients
- 8 oz spaghetti
- 3 tbsp olive oil
- 2, minced garlic cloves
- 14 oz canned diced tomatoes
- 2 tbsp, drained and chopped sun-dried tomatoes in oil
- 1/4 cup, chopped fresh basil
- 2 tbsp, chopped fresh parsley
- 1/4 tsp red pepper flakes
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook for 8-10 minutes until al dente, reserving 1/2 cup pasta water before draining.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 1 minute until fragrant but not browned.
- Step 3: Stir in 14 oz canned diced tomatoes and 2 tbsp chopped sun-dried tomatoes; simmer for 5 minutes until slightly thickened. Add 1/4 cup chopped fresh basil, 2 tbsp chopped fresh parsley, 1/2 tsp sea salt, and 1/4 tsp freshly ground black pepper, then stir in drained spaghetti and 1/4 cup reserved pasta water to create a glossy sauce.
