Herb-Roasted Pork Chops with Caramelized Onions

  1. Step 1: Preheat oven to 400°F (200°C). Pat pork chops dry with paper towels and season both sides with 1/2 tsp salt and 1/4 tsp black pepper.
  2. Step 2: Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat until shimmering. Sear pork chops for 3 minutes per side until golden brown, then transfer skillet to oven and roast for 12-15 minutes until internal temperature reaches 145°F (63°C).
  3. Step 3: While pork cooks, melt 2 tbsp butter in a separate pan over medium heat. Add sliced onions and cook for 10 minutes until caramelized and translucent, stirring occasionally.
  4. Step 4: Remove pork from oven, tent with foil, and let rest. Add balsamic vinegar and 2 tsp minced thyme to onion pan; cook for 2 minutes until reduced by half and syrupy.
  5. Step 5: Slice pork chops, drizzle with onion sauce, and serve immediately.
