- 4 (1-inch thick, about 6 oz each) boneless pork chops
- 1 tbsp finely chopped fresh rosemary
- 1 tsp finely chopped fresh thyme
- 2 tbsp olive oil
- 12 oz trimmed green beans
- 2 cloves minced garlic
- 2 tbsp unsalted butter
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F. Pat pork chops dry with paper towels, then rub with 1 tbsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, 1 tbsp chopped rosemary, and 1/2 tsp chopped thyme.
- Step 2: Heat remaining 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear pork chops for 2 minutes per side until golden brown, then transfer skillet to oven and roast for 12-15 minutes until internal temperature reaches 145°F.
- Step 3: While pork cooks, heat 1 tbsp butter in a separate skillet over medium heat. Add green beans and cook for 3 minutes, then add minced garlic and cook for 1 more minute until fragrant.
- Step 4: Remove skillet from heat, add 1 tbsp lemon juice, 1/4 tsp salt, and 1/8 tsp black pepper, tossing to coat. Return pork chops to skillet and serve immediately with green beans.
