Herb-Scented Eggs with Sautéed Smoked Bacon

- 4 large eggs
- 2 slices smoked bacon
- 1 tbsp olive oil
- 1 tsp fresh thyme leaves
- 1/2 tsp fresh parsley

Instructions
- Step 1: Heat 1 tbsp olive oil in a non-stick skillet over medium heat until shimmering, about 1 minute.
- Step 2: Add 2 slices smoked bacon and cook for 3-4 minutes per side until crisp, then transfer to a paper towel-lined plate to drain.
- Step 3: Pour 4 large eggs into the skillet, season with a pinch of salt and a grind of black pepper, and cook for 2-3 minutes until whites are set but yolks remain runny, gently stirring with a rubber spatula.
- Step 4: Stir in 1 tsp fresh thyme leaves and 1/2 tsp fresh parsley, and cook for 15 seconds more until herbs are fragrant and mixture is evenly distributed.
