Instructions
- Step 1: Preheat a non-stick skillet over medium heat and add 1 tbsp olive oil, swirling to coat the surface.
- Step 2: In a large bowl, combine 2 medium grated zucchini, 1/2 cup grated cheddar cheese, 1/4 cup grated Parmesan cheese, 1/4 cup all-purpose flour, 1/4 cup grated mozzarella cheese, 1/4 cup milk, 1 egg, 1/2 tsp dried herbs, 1/4 tsp salt, and 1/8 tsp black pepper, stirring until fully mixed and no dry spots remain.
- Step 3: Pour the mixture into the preheated skillet, spreading it into an even layer about 1 inch thick.
- Step 4: Cook for 5-7 minutes over medium heat until the bottom is golden brown and crisp, then flip the slice carefully using a spatula.
