Ingredients
- 12 oz penne pasta
- 3 tbsp chopped sun-dried tomatoes
- 1/2 cup heavy cream
- 2 cloves minced garlic
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 tsp dried oregano
- 1/4 tsp salt
- pinch black pepper
Instructions
- Step 1: Bring a large pot of salted water to a boil; add 12 oz penne pasta and cook for 10-12 minutes until al dente. Reserve 1/2 cup pasta water before draining.
- Step 2: While pasta cooks, heat 2 tbsp olive oil in a skillet over medium heat. Add 2 minced garlic cloves and 3 tbsp chopped sun-dried tomatoes; cook for 2 minutes until fragrant and tomatoes soften.
- Step 3: Stir in 1/2 cup heavy cream, 1/4 tsp dried oregano, 1/4 tsp salt, and a pinch of black pepper. Simmer gently for 3 minutes until slightly thickened.
- Step 4: Add drained penne to the skillet along with 1/4 cup reserved pasta water. Toss vigorously for 2 minutes until sauce coats the pasta. Stir in 1/2 cup grated Parmesan cheese until melted and glossy.
