Hidden Step Miso-Glazed Chicken with Sesame Rice

- 3 tbsp white miso paste
- 1 tbsp rice vinegar
- 1 tbsp sugar
- 1 tsp sesame oil
- 3 cups cooked jasmine rice
- 1 tbsp sesame seeds
- 2 tbsp thinly sliced green onions
- 1/4 tsp salt
Instructions
- Step 1: Pat chicken thighs dry and season lightly with 1/4 tsp salt.
- Step 2: Whisk 3 tbsp white miso paste, 1 tbsp rice vinegar, 1 tbsp sugar, and 1 tsp sesame oil in a small bowl until smooth to create the hidden glaze.
- Step 3: Preheat oven to 425°F. Place chicken skin-side up in a roasting pan, brushing evenly with the miso glaze.
- Step 4: Roast for 25 minutes, then brush again with remaining glaze and continue roasting for 10 more minutes until deeply golden and the internal temperature reaches 165°F.
- Step 5: While chicken roasts, mix 1 tbsp sesame seeds with 2 tbsp sliced green onions and 1/2 cup cooked jasmine rice.
- Step 6: Let chicken rest for 5 minutes before serving over the sesame rice mixture.
