- 1 tbsp minced ginger
- 1 tsp sesame oil
- 3 tbsp sliced green onions
- 4 cups cooked rice
Instructions
- Step 1: Pat 1 lb chicken thighs dry with paper towels, then season with 1/2 tsp salt and 1/4 tsp black pepper. Heat 1 tsp sesame oil in a large skillet over medium-high heat until shimmering, then add chicken in a single layer and cook for 5-6 minutes per side until golden brown and cooked through; remove and set aside.
- Step 2: In the same skillet, add 10 oz frozen mixed vegetables and cook for 3 minutes until partially thawed, then stir in 1 tbsp minced ginger, 3 tbsp hoisin sauce, 1 tbsp soy sauce, and 1 tsp rice vinegar. Simmer for 2 minutes until vegetables are tender-crisp and sauce thickens slightly.
- Step 3: Return chicken to the skillet and toss to coat evenly with sauce, cooking for 1 minute more to heat through. Remove from heat and stir in 3 tbsp sliced green onions.
- Step 4: Serve immediately over 4 cups cooked rice, ensuring each portion has equal chicken, vegetables, and sauce.
