Honey-Ginger Lemon Punch

  1. Step 1: In a medium saucepan, combine 2 cups fresh lemon juice, 1/2 cup fresh ginger, and 1/4 cup honey; simmer over medium heat for 15 minutes until ginger is tender and flavors meld.
  2. Step 2: Strain through a fine-mesh sieve into a large pitcher, pressing solids to extract all liquid; discard solids.
  3. Step 3: Add 4 cups cold water and 1/2 cup fresh mint leaves to the pitcher; stir until well combined.
  4. Step 4: Stir in 1/4 cup sliced almonds and 1/4 cup fresh pineapple chunks; cover and refrigerate for at least 1 hour.
  5. Step 5: Serve cold, garnished with additional mint leaves and pineapple chunks.
