  1. Step 1: Preheat oven to 400°F (200°C). Toss 1 lb sliced carrots with 2 tbsp olive oil, 1/4 tsp salt, and spread on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized, stirring once halfway.
  2. Step 2: While carrots roast, whisk together 3 tbsp honey, 1 tbsp balsamic vinegar, 1 tsp lemon juice, and a pinch of salt to make the dressing.
  3. Step 3: In a large bowl, combine 5 oz mixed greens, 2 thinly sliced apples, and roasted carrots. Drizzle with 2 tbsp dressing and toss gently until evenly coated.
