Honey-Glazed Pork Shoulder with Apple Slices

Ingredients
- 2 lbs pork shoulder
- 3 tbsp honey
- 1 apple
- 2 cloves garlic
- 1 tsp rosemary
- 1 tbsp olive oil
Instructions
- Step 1: Preheat oven to 325°F. Pat 2 lbs pork shoulder dry, then rub with 1 tbsp olive oil, 2 minced garlic cloves, and 1 tsp chopped rosemary.
- Step 2: Place pork shoulder in a roasting pan, fat side up. Roast for 2 hours until internal temperature reaches 160°F, basting every 30 minutes with pan juices.
- Step 3: While pork roasts, core and slice 1 apple into 1/4-inch thick wedges. Toss with 3 tbsp honey and 1 tsp water.
- Step 4: After 2 hours, remove pork from oven. Spread apple mixture over top, return to oven, and roast for 30 more minutes until apple is caramelized and pork reaches 195°F.
