  1. Step 1: Preheat oven to 325°F. Pat 2 lbs pork shoulder dry, then rub with 1 tbsp olive oil, 2 minced garlic cloves, and 1 tsp chopped rosemary.
  2. Step 2: Place pork shoulder in a roasting pan, fat side up. Roast for 2 hours until internal temperature reaches 160°F, basting every 30 minutes with pan juices.
  3. Step 3: While pork roasts, core and slice 1 apple into 1/4-inch thick wedges. Toss with 3 tbsp honey and 1 tsp water.
  4. Step 4: After 2 hours, remove pork from oven. Spread apple mixture over top, return to oven, and roast for 30 more minutes until apple is caramelized and pork reaches 195°F.
