Honey-Glazed Pork Tenderloin with Apple and Sage

Ingredients
- 1 (about 1 lb) pork tenderloin
- 2 tbsp olive oil
- 2 tbsp Dijon mustard
- 2 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2, cored and diced apple
- 3 tbsp, chopped fresh sage
- 1/4 cup chicken broth
Instructions
- Step 1: Preheat oven to 400°F (200°C). Season 1 pork tenderloin with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat. Add the seasoned pork tenderloin and sear for 3 minutes per side until browned.
- Step 3: Remove pork from skillet and set aside. Add 2 tbsp Dijon mustard and 2 tbsp honey to the skillet, stirring to combine. Add 2 diced apples and 3 tbsp chopped fresh sage, and cook for 2 minutes.
- Step 4: Return pork to skillet, add 1/4 cup chicken broth, and transfer to oven. Bake for 15-20 minutes until internal temperature reaches 145°F.
- Step 5: Let rest for 5 minutes before slicing.
