Honey-Lavender Glazed Chicken with Seasonal Greens

Ingredients
- 1 lb chicken thighs
- 3 tbsp local honey
- 1 tsp dried culinary lavender
- 1/4 cup white wine
- 1/2 cup chicken broth
- 2 tbsp olive oil
- 3 cloves minced garlic
- 3 cups chopped kale
- 1 finely chopped shallot
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Season chicken thighs with salt and pepper. Heat 1 tbsp olive oil in skillet over medium-high. Sear chicken 5 minutes per side until golden.
- Step 2: Remove chicken. Add shallot and garlic to skillet, sauté 2 minutes until fragrant.
- Step 3: Stir in honey, lavender, wine, and broth. Simmer 5 minutes until slightly thickened.
- Step 4: Return chicken to skillet, spoon sauce over top, and simmer 10 minutes until chicken reaches 165°F.
- Step 5: While chicken cooks, heat 1 tbsp olive oil in separate pan. Sauté kale and lemon juice for 4 minutes until wilted.
- Step 6: Serve chicken with sauce and sautéed kale, drizzling extra sauce over greens.
