- 2 tbsp sesame oil
- 3 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp sesame seeds
Instructions
- Step 1: Arrange 1 lb peeled and 1/4-inch thick carrot coins in a single layer on a baking sheet; drizzle with 2 tbsp sesame oil and toss to coat evenly.
- Step 2: Roast in a preheated 425°F oven for 20 minutes, flipping halfway through, until edges are caramelized and tender when pierced with a fork.
- Step 3: While carrots roast, whisk together 3 tbsp honey and 1 tbsp soy sauce in a small bowl until smooth.
- Step 4: Remove carrots from oven, pour honey-soy mixture over them, and toss to coat; return to oven for 5 minutes until glaze is shiny and sticky.
