Honey-Soy Glazed Salmon with Sesame-Soy Vegetables

  1. Step 1: Whisk together 3 tbsp soy sauce, 2 tbsp honey, 1 tbsp rice vinegar, 1 tsp sesame oil, and 1/2 tsp black pepper in a small bowl. Set aside.
  2. Step 2: Heat 1 tbsp olive oil in a skillet over medium-high heat. Pat salmon dry, season with salt and pepper, and place skin-side down. Cook for 6-7 minutes until skin is crisp, then flip and cook 3-4 minutes more until opaque. Remove salmon and set aside.
  3. Step 3: Add 1 tbsp olive oil to the same skillet, then stir-fry 2 cups broccoli florets and 1 cup sliced carrots with 2 minced garlic cloves and 1 tsp grated ginger for 4-5 minutes until crisp-tender. Mix 1 tsp cornstarch with 2 tbsp water and 2 tbsp reserved glaze, then pour into skillet. Cook for 1 minute until sauce thickens, then add salmon and spoon sauce over top.
