  1. Step 1: Whisk together soy sauce, honey, rice vinegar, and sesame oil in a small bowl until combined. Set aside.
  2. Step 2: Heat a nonstick skillet over medium-high heat. Add tofu cubes and cook for 4-5 minutes per side until golden and crisp. Remove tofu and set aside.
  3. Step 3: Cook soba noodles according to package directions. Drain, rinse under cold water, and toss with 1/2 tsp sesame oil to prevent sticking.
  4. Step 4: In the same skillet, add carrots and bok choy. Sauté for 3-4 minutes until vegetables are tender-crisp. Return tofu to skillet and pour glaze over, tossing gently to coat. Cook for 1 minute until sauce thickens slightly.
  5. Step 5: Divide noodles between plates, top with tofu and vegetables, and sprinkle with toasted sesame seeds before serving.
