Instant Pot Miso-Glazed Eggplant

Ingredients
- 2 medium, sliced into 1/2-inch rounds eggplant
- 3 tbsp miso paste
- 2 tbsp rice vinegar
- 1 tbsp maple syrup
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/4 cup water
- 1 tsp sesame seeds
Instructions
- Step 1: Place 2 medium sliced eggplant rounds in an Instant Pot. Whisk together 3 tbsp miso paste, 2 tbsp rice vinegar, 1 tbsp maple syrup, 1 tbsp soy sauce, 1 tsp sesame oil, and 1/4 cup water in a small bowl until smooth.
- Step 2: Pour the miso mixture over eggplant, ensuring all pieces are coated. Secure the lid and set to MANUAL for 5 minutes at high pressure.
- Step 3: Allow natural release for 10 minutes, then quick release any remaining pressure. Remove lid and stir gently to coat eggplant in sauce.
- Step 4: Transfer to a serving dish, sprinkle with 1 tsp sesame seeds, and serve warm with steamed rice.
