Jamaican Jerk Tofu with Mango Salsa

Ingredients
- 14 oz, pressed and cubed Extra-firm tofu
- 2 tbsp Jerk seasoning
- 1 tbsp Olive oil
- 1, finely diced Mango
- 1/4 cup, finely diced Red onion
- 2 tbsp, chopped Cilantro
- 1/2, juiced Lime
- 1/4 tsp, finely diced Red pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss 14 oz pressed and cubed tofu with 2 tbsp jerk seasoning and 1 tbsp olive oil until evenly coated.
- Step 2: Arrange tofu on a parchment-lined baking sheet and bake for 20 minutes, flipping once halfway, until golden and crisp.
- Step 3: While tofu bakes, combine 1 diced mango, 1/4 cup diced red onion, 2 tbsp chopped cilantro, 1/2 lime juiced, and 1/4 tsp diced red pepper in a bowl.
- Step 4: Serve baked tofu topped with mango salsa, ensuring each bite has the sweet-tart salsa to balance the jerk spice.
