Kombucha-Glazed Chicken Thighs with Lemon and Thyme

- 1.5 pounds (skinless, bone-in) chicken thighs
- 1/4 cup (GT's or no-added-sugar brand) kombucha
- 1, zest and juice lemon
- 1 tablespoon, chopped fresh thyme
- 2 tablespoons olive oil
- 3 cloves, minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Pat chicken thighs dry with paper towels. In a bowl, whisk together 1/4 cup kombucha, lemon zest, lemon juice, 1 tablespoon thyme, 2 tablespoons olive oil, minced garlic, salt, and pepper.
- Step 2: Coat chicken thighs evenly with marinade, ensuring all sides are covered. Refrigerate for 30 minutes (or up to 2 hours for deeper flavor).
- Step 3: Heat a skillet over medium-high heat. Add chicken thighs skin-side down and cook for 8 minutes until golden brown. Flip and cook for another 8 minutes until internal temperature reaches 165°F.
- Step 4: Reduce heat to low, pour remaining marinade into skillet, and simmer for 2 minutes until slightly thickened. Remove chicken from pan, let rest for 5 minutes before serving.
