Korean Gochujang Oxtail Soup with Sweet Potato

  1. Step 1: Heat 2 tbsp vegetable oil in a large pot over medium-high heat. Add 3 lbs oxtail pieces and sear until browned on all sides, about 5 minutes per side.
  2. Step 2: Add 1 large onion, diced, 4 cloves garlic, minced, and 1 inch ginger, grated, and cook for 3 minutes until fragrant.
  3. Step 3: Stir in 2 tbsp gochujang, 3 tbsp soy sauce, and 1/4 cup rice wine, cooking for 1 minute until aromatic.
  4. Step 4: Pour in 4 cups beef broth and bring to a simmer.
  5. Step 5: Add 2 sweet potatoes, peeled and cubed, 2 carrots, sliced, and 1/2 cup kimchi, chopped, and simmer uncovered for 2 hours until oxtail is tender.
  6. Step 6: Stir in 2 green onions, sliced, and cook for 2 minutes more. Adjust seasoning with extra soy sauce if needed.
  7. Step 7: Serve hot with steamed rice.
