  1. Step 1: In a large bowl, combine 1 can (15 oz) drained and rinsed chickpeas, 1 peeled and diced cucumber, 1 diced red bell pepper, and 1/2 finely diced red onion.
  2. Step 2: In a small bowl, whisk together 3 tbsp olive oil, 2 tbsp lemon juice, 1 tsp Dijon mustard, 1/2 tsp salt, and 1/4 tsp black pepper until emulsified.
