Ingredients
- 1 can (15 oz) chickpeas
- 1 cucumber
- 1 red bell pepper
- 1/2 red onion
- 1/2 cup kalamata olives
- 1/2 cup feta cheese
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1/4 cup fresh parsley
- 1 tsp dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: In a large bowl, combine 1 can (15 oz) drained and rinsed chickpeas, 1 peeled and diced cucumber, 1 diced red bell pepper, and 1/2 finely diced red onion.
- Step 2: In a small bowl, whisk together 3 tbsp olive oil, 2 tbsp lemon juice, 1 tsp Dijon mustard, 1/2 tsp salt, and 1/4 tsp black pepper until emulsified.
- Step 3: Pour dressing over chickpea mixture and toss gently to coat. Stir in 1/2 cup pitted and halved Kalamata olives and 1/2 cup crumbled feta cheese.
- Step 4: Garnish with 1/4 cup chopped fresh parsley and serve immediately.
