Lemon and Chive Frittata with Fresh Herbs

Ingredients
- 6 large eggs
- 2 tbsp milk
- 1/4 cup, finely chopped chives
- 1 tbsp lemon zest
- 1/4 cup, chopped fresh parsley
- 1/4 cup, shredded sharp cheddar cheese
- 2 tbsp olive oil
- to taste salt
- to taste black pepper
Instructions
- Step 1: Whisk 6 large eggs, 2 tbsp milk, 1/4 cup chopped chives, 1 tbsp lemon zest, salt, and pepper in medium bowl until smooth.
- Step 2: Heat 2 tbsp olive oil in 8-inch ovenproof skillet over medium. Pour in egg mixture, sprinkle with 1/4 cup chopped parsley and 1/4 cup shredded cheddar, and cook 4-5 minutes until edges set.
- Step 3: Transfer skillet to 375°F (190°C) oven and bake 12-15 minutes until center set and golden. Let rest 5 minutes before slicing.
