Lemon-Dill Cod with Herb Oil

Ingredients
- 1 lb cod fillets
- 3 tbsp fresh dill
- 1 lemon
- 3 tbsp extra virgin olive oil
- 2 cloves garlic
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F. Pat 1 lb cod fillets dry with paper towels, then season evenly with 1 tsp sea salt and 1/2 tsp black pepper.
- Step 2: Zest 1 lemon, then thinly slice the lemon wedges. Finely chop 3 tbsp fresh dill. Heat 3 tbsp extra virgin olive oil in an ovenproof skillet over medium heat, add 2 minced garlic cloves, and sauté for 1 minute until fragrant but not browned.
- Step 3: Arrange seasoned cod fillets in the skillet, top with lemon slices and chopped dill, and bake for 12-15 minutes until the fish flakes easily with a fork.
- Step 4: Remove from oven, stir reserved lemon zest into the pan juices, and drizzle the herb oil mixture over the cod before serving.
