Lemon-Dill Shrimp with Asparagus and Lemon Butter

- 8 oz, peeled and deveined shrimp
- 12 oz, trimmed asparagus
- 2 tbsp butter
- 1, zested and juiced lemon
- 1 tbsp fresh, chopped dill
- 2 cloves, minced garlic
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add 12 oz trimmed asparagus and cook for 5-6 minutes until crisp-tender, flipping halfway, then set aside.
- Step 2: Add 2 tbsp butter and 2 minced garlic cloves to the same skillet. Sauté for 1 minute until fragrant, then add 8 oz shrimp, 1/4 tsp salt, and 1/4 tsp black pepper. Cook for 2-3 minutes per side until shrimp turn pink and opaque.
- Step 3: Stir in 1 tbsp fresh dill, 1 tsp lemon zest, 1 tbsp lemon juice, and 1/4 tsp lemon zest. Cook for 30 seconds until butter emulsifies. Toss with asparagus and serve immediately.
