Lemon-Garlic Chicken with Roasted Zucchini

  1. Step 1: Preheat oven to 400°F (200°C). Pat chicken breasts dry with paper towels, then rub with 2 tbsp olive oil, 3 minced garlic cloves, zest and juice of 1 lemon, 1/2 tsp dried thyme, 1/4 tsp salt, and 1/4 tsp black pepper. Let marinate for 10 minutes.
  2. Step 2: Place 2 sliced zucchinis on a baking sheet, drizzle with 1 tbsp olive oil, and season with a pinch of salt and pepper. Roast in oven for 15 minutes until tender and slightly golden.
  3. Step 3: Place marinated chicken breasts on a separate baking sheet and roast for 15-18 minutes until internal temperature reaches 165°F (74°C), turning once halfway through.
