Ingredients
- 4 (6 oz each) Cod fillets
- 2 tbsp Olive oil
- 1 medium Lemon
- 3 cloves Garlic
- 2 tbsp Fresh parsley
- 1 tbsp Fresh dill
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 2 tbsp Butter
Instructions
- Step 1: Pat 4 cod fillets dry with paper towels. Season both sides with 1/2 tsp salt and 1/4 tsp black pepper. In a small bowl, mix the zest and juice of 1 medium lemon, 3 minced garlic cloves, 2 tbsp chopped fresh parsley, and 1 tbsp chopped fresh dill.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Place cod fillets skin-side down and cook for 6-7 minutes until skin is crispy and golden. Flip and cook for 3-4 minutes until fish is opaque and flakes easily.
- Step 3: Remove cod from skillet. Add 2 tbsp butter to the skillet and swirl to melt. Add the remaining lemon juice from 1 medium lemon and 1 tbsp chopped dill. Simmer for 1 minute until sauce thickens slightly.
- Step 4: Drizzle sauce over cod and serve immediately.
