Lemon-Garlic Herb Crusted Cod with Lemon-Dill Sauce

  1. Step 1: Pat 4 cod fillets dry with paper towels. Season both sides with 1/2 tsp salt and 1/4 tsp black pepper. In a small bowl, mix the zest and juice of 1 medium lemon, 3 minced garlic cloves, 2 tbsp chopped fresh parsley, and 1 tbsp chopped fresh dill.
  2. Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Place cod fillets skin-side down and cook for 6-7 minutes until skin is crispy and golden. Flip and cook for 3-4 minutes until fish is opaque and flakes easily.
  3. Step 3: Remove cod from skillet. Add 2 tbsp butter to the skillet and swirl to melt. Add the remaining lemon juice from 1 medium lemon and 1 tbsp chopped dill. Simmer for 1 minute until sauce thickens slightly.
  4. Step 4: Drizzle sauce over cod and serve immediately.
