Lemon-Glazed Chicken with Fresh Herbs

Ingredients
- 4 (about 1.5 lbs total) boneless skinless chicken breasts
- 2 tbsp olive oil
- 3 tbsp lemon juice
- 1 tbsp lemon zest
- 1 tsp, chopped fresh thyme
- 1 tsp, chopped fresh rosemary
- 2 cloves, minced garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp honey
Instructions
- Step 1: Pat 4 boneless skinless chicken breasts (about 1.5 lbs total) dry with paper towels. Season both sides with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook 5-6 minutes per side until golden brown and internal temperature reaches 165°F. Transfer to a plate and tent loosely with foil.
- Step 3: Add 3 tbsp lemon juice, 1 tbsp lemon zest, 1 tsp chopped thyme, 1 tsp chopped rosemary, and 2 minced garlic cloves to the skillet. Cook 1 minute until fragrant.
- Step 4: Return chicken to skillet, spooning sauce over top. Add 1 tbsp honey and cook 2-3 minutes more until sauce thickens and coats chicken.
