- 2 tablespoons olive oil
- 1 lemon
- 2 tablespoons fresh dill
- 1 pound asparagus
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
Instructions
- Step 1: Preheat oven to 400°F (200°C). Place 1 pound trimmed asparagus on a baking sheet, drizzle with 1 teaspoon olive oil, and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Roast for 12-15 minutes until tender-crisp.
- Step 2: Pat the 2 (6 oz) salmon fillets dry and season with 1/4 teaspoon salt, 1/4 teaspoon pepper, and 1/2 teaspoon garlic powder. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Sear the salmon skin-side down for 4-5 minutes until golden, then flip and cook for 3-4 minutes more.
- Step 3: In a small bowl, whisk together the zest and juice of 1 lemon and 2 tablespoons fresh dill. Brush the glaze over the salmon during the last minute of cooking.
