Lemon-Glazed Sautéed Shrimp with Asparagus

Ingredients
- 1 lb shelled and deveined large shrimp
- 12 oz trimmed asparagus
- 2 tbsp extra-virgin olive oil
- 1 medium, zested and juiced lemon
- 2 tbsp finely chopped fresh parsley
- 1 clove minced garlic
- 1/4 tsp red pepper flakes
Instructions
- Step 1: Heat 2 tbsp extra-virgin olive oil in a large skillet over medium-high heat until shimmering.
- Step 2: Add 1 lb shelled shrimp to the skillet, season with 1/2 tsp salt and 1/4 tsp black pepper, and cook for 2 minutes per side until pink and opaque.
- Step 3: Remove shrimp from skillet and set aside. Add 12 oz trimmed asparagus to the same skillet, cooking for 4 minutes until crisp-tender, stirring occasionally.
- Step 4: Return shrimp to the skillet, add 1 minced garlic clove, 1/4 tsp red pepper flakes, and the zest and juice of 1 lemon. Cook for 1 minute until fragrant and flavors meld.
- Step 5: Remove from heat, stir in 2 tbsp chopped fresh parsley, and serve immediately over rice or with crusty bread.
