Lemon Herb Pan-Seared Cod with Asparagus

Ingredients
- 1 lb, skin-on cod fillets
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 2 cloves, minced garlic
- 1 bunch, trimmed asparagus
- 1/4 cup, chopped fresh parsley
Instructions
- Step 1: Pat 1 lb cod fillets dry and season with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: Heat 1 tbsp olive oil in a skillet over medium-high heat. Add cod skin-side down and cook for 4-5 minutes until skin is crispy.
- Step 3: Flip cod and cook for 3-4 minutes until fish flakes easily. Remove and set aside.
- Step 4: Add remaining 1 tbsp olive oil, minced garlic, and 1 bunch trimmed asparagus to the skillet. Sauté for 5-7 minutes until asparagus is tender-crisp.
- Step 5: Return cod to skillet. Stir in 2 tbsp lemon juice, 1 tbsp lemon zest, and 1/4 cup chopped parsley. Cook for 1 minute until heated through.
