Instructions
- Step 1: Preheat oven to 350°F. Boil sweet potatoes for 15 minutes until tender, then mash until smooth. Cool completely.
- Step 2: In a bowl, whisk mashed sweet potatoes, maple syrup, lemon zest, coconut oil, and salt until fully combined.
- Step 3: Add flour and baking powder, mixing until a dough forms (do not overmix). Chill for 30 minutes.
- Step 4: Roll dough into 1-inch balls and place 2 inches apart on a parchment-lined baking sheet. Flatten slightly with a fork. Bake for 12-14 minutes until edges are golden and set.
