  2. Step 2: Remove from heat and let cool for 10 minutes. Stir in 1/2 cup fresh lemon juice, 1 tsp lemon zest, and 2 tbsp chopped fresh mint leaves.
  3. Step 3: Pour the mixture into a shallow dish and cover with plastic wrap. Freeze for 3-4 hours, then scrape with a fork every 30 minutes for 2-3 times to create a light, granita-like texture. Serve immediately.
