Lemon-Mint Sorbet

Ingredients
- 1/2 cup fresh lemon juice
- 1/4 cup granulated sugar
- 1/4 cup water
- 2 tbsp fresh mint leaves
- 1 tsp lemon zest
Instructions
- Step 1: In a small saucepan, combine 1/4 cup granulated sugar and 1/4 cup water. Heat over medium heat, stirring until the sugar dissolves, then bring to a simmer and cook for 2 minutes to make a simple syrup.
- Step 2: Remove from heat and let cool for 10 minutes. Stir in 1/2 cup fresh lemon juice, 1 tsp lemon zest, and 2 tbsp chopped fresh mint leaves.
- Step 3: Pour the mixture into a shallow dish and cover with plastic wrap. Freeze for 3-4 hours, then scrape with a fork every 30 minutes for 2-3 times to create a light, granita-like texture. Serve immediately.
